Ingredients

  • 2 pounds potatoes, peeled and quartered
  • 1 cup all-purpose flour, plus more for dusting
  • 1 large egg
  • 1 teaspoon salt
  • 1 pound ground meat (beef, pork, or chicken)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Butter, for serving
  • Fresh herbs, for garnish (optional)

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
  2. Mash the potatoes in a large bowl until smooth. Add the flour, egg, and salt. Mix until a dough forms.
  3. In a skillet, heat a bit of oil over medium heat. Add the onion and garlic, cooking until softened.
  4. Add the ground meat to the skillet, season with paprika, salt, and pepper, and cook until browned and cooked through. Remove from heat and let cool slightly.
  5. Divide the potato dough into small portions. Flatten each portion into a disk and place a spoonful of the meat filling in the center.
  6. Fold the dough over the filling and pinch to seal, forming a dumpling. Repeat with the remaining dough and filling.
  7. Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water in batches. Cook until they float to the top, about 5-7 minutes.
  8. Remove the dumplings with a slotted spoon and let them drain.
  9. Serve the dumplings warm, topped with melted butter and fresh herbs if desired.

Notes

  • You can use leftover meat or even vegetables for the filling.
  • Make sure to seal the dumplings well to prevent the filling from leaking during cooking.
