Ingredients

- 500g ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 egg
- 1/2 cup breadcrumbs
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp olive oil
- 4 cups beef broth
- 2 carrots, diced
- 2 potatoes, diced
- 1 cup peas
- 1 tsp dried thyme
- 1 bay leaf
Instructions
- In a bowl, mix ground beef, onion, garlic, egg, breadcrumbs, salt, and pepper.
- Shape the mixture into small meatballs.
- Heat olive oil in a large pot and brown the meatballs on all sides. Remove and set aside.
- In the same pot, add carrots, potatoes, and peas. Cook for 5 minutes.
- Pour in beef broth, add thyme and bay leaf. Bring to a boil.
- Return the meatballs to the pot. Simmer for 20 minutes until vegetables are tender.
- Remove bay leaf before serving.
Notes
- Use lean ground beef for a healthier option.
- You can substitute breadcrumbs with oats for a gluten-free version.
- Store leftovers in an airtight container for up to 3 days.
