Ingredients

  • 500g ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 egg
  • 1/2 cup breadcrumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp olive oil
  • 4 cups beef broth
  • 2 carrots, diced
  • 2 potatoes, diced
  • 1 cup peas
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. In a bowl, mix ground beef, onion, garlic, egg, breadcrumbs, salt, and pepper.
  2. Shape the mixture into small meatballs.
  3. Heat olive oil in a large pot and brown the meatballs on all sides. Remove and set aside.
  4. In the same pot, add carrots, potatoes, and peas. Cook for 5 minutes.
  5. Pour in beef broth, add thyme and bay leaf. Bring to a boil.
  6. Return the meatballs to the pot. Simmer for 20 minutes until vegetables are tender.
  7. Remove bay leaf before serving.

Notes

  • Use lean ground beef for a healthier option.
  • You can substitute breadcrumbs with oats for a gluten-free version.
  • Store leftovers in an airtight container for up to 3 days.
