Description

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup fresh or frozen cranberries
  • 1/4 cup honey
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a small saucepan, combine cranberries, honey, and balsamic vinegar. Cook over medium heat for 5-7 minutes until cranberries burst and sauce thickens. Set aside.
  3. Brush salmon fillets with olive oil and season with garlic powder, oregano, salt, and pepper.
  4. Place salmon on the baking sheet and bake for 12-15 minutes, or until fully cooked.
  5. Spoon cranberry sauce over the salmon and garnish with fresh parsley before serving.

Notes

  • For extra flavor, add a pinch of red pepper flakes to the cranberry sauce.
  • Leftover sauce can be stored in the fridge for up to 3 days.
  • Serve with roasted vegetables or quinoa.
