- 4 salmon fillets (6 oz each)
- 1 cup fresh or frozen cranberries
- 1/4 cup honey
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a small saucepan, combine cranberries, honey, and balsamic vinegar. Cook over medium heat for 5-7 minutes until cranberries burst and sauce thickens. Set aside.
- Brush salmon fillets with olive oil and season with garlic powder, oregano, salt, and pepper.
- Place salmon on the baking sheet and bake for 12-15 minutes, or until fully cooked.
- Spoon cranberry sauce over the salmon and garnish with fresh parsley before serving.
Notes
- For extra flavor, add a pinch of red pepper flakes to the cranberry sauce.
- Leftover sauce can be stored in the fridge for up to 3 days.
- Serve with roasted vegetables or quinoa.
