- 8 oz penne pasta
- 2 cups cooked chicken, diced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 cup red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and sliced
- 1/4 cup feta cheese, crumbled
- 2 tbsp fresh parsley, chopped
- 1/4 cup olive oil
- 2 tbsp lemon juice
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Cook pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine cooked pasta, chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour dressing over the salad and toss gently to coat.
- Sprinkle with fresh parsley before serving.
Notes
- For best flavor, let the salad chill for at least 30 minutes before serving.
- Replace chicken with chickpeas for a vegetarian version.
- Add extra lemon juice if you prefer a tangier taste.
