Ingredients

  • 2 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1/4 cup fresh basil, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried oregano
  • 1/2 cup vegetable broth

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add onion and garlic, sauté for 2-3 minutes until softened.
  3. Stir in diced tomatoes, basil, salt, pepper, oregano, and vegetable broth.
  4. Bring sauce to a simmer and cook for 5 minutes.
  5. Place cod fillets in the sauce, cover, and cook for 8-10 minutes until fish flakes easily.
  6. Serve hot with a sprinkle of fresh basil.
