A refreshing and nutritious Mediterranean quinoa salad packed with fresh vegetables, herbs, and a zesty dressing. Perfect for a light summer meal.
Ingredients

- 1 cup quinoa, rinsed
- 2 cups water
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, finely chopped
- 1/4 cup kalamata olives, pitted and sliced
- 1/4 cup crumbled feta cheese
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 3 tbsp extra-virgin olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Rinse quinoa under cold water and drain.
- Bring water to a boil in a saucepan. Add quinoa, reduce heat, cover, and simmer for 15 minutes or until water is absorbed. Let it cool.
- In a large bowl, combine cucumber, cherry tomatoes, red onion, olives, feta, parsley, and mint.
- Whisk together olive oil, lemon juice, garlic, salt, and pepper in a small bowl.
- Add cooled quinoa to the vegetable mixture and drizzle with the dressing. Toss gently.
- Serve chilled or at room temperature.
Notes
- Store leftovers in an airtight container for up to 3 days.
- For extra flavor, add a pinch of dried oregano or basil.
- Substitute feta with goat cheese or omit for a vegan version.
