Ingredients

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup crumbled feta cheese
  • 1/4 cup Kalamata olives
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, and red onion.
  2. Add chickpeas, feta cheese, and Kalamata olives.
  3. In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss gently.
  5. Serve immediately or chill for 15 minutes before serving.
