Ingredients

- 1 lb (450g) cooked shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/4 cup Kalamata olives, pitted and halved
- 2 tbsp fresh parsley, chopped
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- In a large bowl, combine shrimp, avocado, cherry tomatoes, cucumber, red onion, olives, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the salad and gently toss to coat.
- Serve immediately or refrigerate for up to 1 hour before serving.

- Use fresh, high-quality shrimp for best results.
- If preparing ahead, add avocado just before serving to prevent browning.
