- 1/2 teaspoon black pepper
- 1 cup corn kernels, fresh or frozen
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
Instructions
- In a large bowl, combine the shredded cabbage and grated carrots for the coleslaw. In a separate bowl, whisk together the mayonnaise, apple cider vinegar, sugar, salt, and pepper. Pour the dressing over the cabbage mixture and toss to combine. Refrigerate for at least 1 hour before serving.
- For the potato salad, boil the cubed potatoes in salted water until tender, about 10-15 minutes. Drain and let cool slightly. In a large bowl, mix together the sour cream, mayonnaise, Dijon mustard, dill, salt, and pepper. Add the cooled potatoes, corn, diced bell pepper, and red onion. Toss gently to combine and refrigerate for at least 1 hour before serving.
