- 2 cups strawberries, hulled and sliced
- 2 cups blueberries
- 1 package (3.4 oz) vanilla instant pudding mix
- 2 cups cold milk
- 1 cup whipped cream, plus extra for topping
- 1/2 teaspoon vanilla extract
- 1 pound pound cake, cut into cubes
- Fresh mint leaves for garnish (optional)
Instructions
- In a medium bowl, whisk together the vanilla pudding mix and cold milk until smooth. Let it sit for 5 minutes to thicken.
- In another bowl, fold the whipped cream and vanilla extract into the pudding mixture until fully combined.
- In a large trifle dish or glass bowl, layer half of the pound cake cubes at the bottom.
- Add a layer of half of the sliced strawberries and half of the blueberries over the cake.
- Spread half of the pudding mixture over the berries.
- Repeat the layers with the remaining pound cake, strawberries, blueberries, and pudding.
- Top with extra whipped cream and garnish with fresh mint leaves if desired.
- Refrigerate for at least 1 hour before serving to allow the flavors to meld.
Notes
- You can substitute the pound cake with angel food cake or sponge cake if preferred.
- Feel free to add other berries like raspberries for a mix of flavors.
