- 1 lb ground beef
- 1 onion, diced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chiles
- 1 packet taco seasoning
- 6 corn tortillas, cut into quarters
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1/2 cup sliced black olives
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, cook the ground beef, onion, and bell pepper until the beef is browned and vegetables are tender. Drain excess fat.
- Stir in black beans, diced tomatoes, and taco seasoning. Simmer for 5 minutes.
- Layer half the tortillas in a greased baking dish. Spread half the beef mixture, half the cheese, and half the sour cream. Repeat the layers.
- Bake for 20-25 minutes until bubbly. Top with olives and cilantro before serving.
Notes
- Substitute ground turkey or chicken for a lighter option.
- Use flour tortillas if you prefer a softer texture.
- Add jalapeños for extra heat.
