A creamy and flavorful Mexican corn dip perfect for parties.
Ingredients

- 2 cups corn kernels, fresh or frozen
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine corn, cream cheese, sour cream, and cheddar cheese.
- Add in red onion, cilantro, lime juice, chili powder, salt, and pepper.
- Mix until well combined.
- Transfer the mixture to a baking dish.
- Bake for 20-25 minutes until heated through and slightly golden on top.
- Serve warm with tortilla chips.
Notes
- Can be made ahead and stored in the refrigerator.
- Reheat before serving.
- Add jalapeños for some heat.
