A creamy and flavorful dip inspired by Mexican street corn.
Ingredients

- 2 cups corn kernels
- 1 cup cream cheese, softened
- 1 cup sour cream
- 1/2 cup mayonnaise
- 1/2 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 1 jalapeño, diced
- 1 tablespoon lime juice
- 1 teaspoon chili powder
- Salt to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine corn, cream cheese, sour cream, and mayonnaise.
- Add cotija cheese, cilantro, jalapeño, lime juice, chili powder, and salt.
- Mix well until all ingredients are combined.
- Transfer the mixture to a baking dish.
- Bake for 20-25 minutes until heated through and slightly golden.
- Serve warm with tortilla chips.
Notes
- This dip can be made ahead and stored in the refrigerator.
- Top with extra cotija cheese and cilantro before serving.
- Adjust the spice level by adding more or less jalapeño.
