A flavorful Mexican street corn pasta salad that combines the best of both worlds. This dish is easy to make and packed with delicious flavors.

- 8 oz pasta (penne or fusilli)
- 2 cups corn (fresh, canned, or frozen)
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup cotija cheese (crumbled)
- 1/4 cup cilantro (chopped)
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1 lime (juiced)
- 1 clove garlic (minced)
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and let cool.
- In a large bowl, mix mayonnaise, sour cream, lime juice, garlic, chili powder, smoked paprika, salt, and pepper.
- Add cooked pasta, corn, and cilantro to the bowl. Toss until well combined.
- Sprinkle cotija cheese on top before serving.
- Chill for at least 30 minutes before serving for best flavor.
Notes
- For extra flavor, grill the corn before adding it to the salad.
- If cotija cheese is unavailable, feta cheese can be used as a substitute.
- Adjust chili powder to your preferred spice level.
