Ingredients

- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/2 cup crumbled cotija cheese
- 1 teaspoon chili powder
- 1 lime, juiced
- 1/4 cup chopped cilantro
- 1 jalapeño, seeded and minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Grill corn over medium heat until lightly charred, about 10 minutes. Let cool.
- Cut kernels off the cob into a large bowl.
- Mix mayonnaise, sour cream, lime juice, salt, and pepper in a small bowl.
- Pour dressing over corn and toss to coat.
- Add cotija cheese, cilantro, and jalapeño. Mix well.
- Serve chilled or at room temperature.

- Use Greek yogurt instead of sour cream for a lighter option.
- Add diced avocado for extra creaminess.
