Ingredients

- 4 ripe peaches, sliced
- 2 cups arugula
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped pecans
- 2 tbsp honey
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions
- Wash and slice peaches into thin wedges
- In a large bowl, combine arugula and peach slices
- Sprinkle feta cheese and pecans over the salad
- In a small bowl, whisk together honey, olive oil, balsamic vinegar, salt and pepper
- Drizzle dressing over salad and toss gently to combine
- Serve immediately

- Use ripe but firm peaches for best texture
- Toast pecans for extra flavor if desired
- Add grilled chicken to make it a main dish
- Best served fresh – dressing may wilt greens if stored
