- 2 medium eggplants, sliced in half lengthwise
- 1/4 cup white miso paste
- 2 tablespoons mirin
- 2 tablespoons soy sauce
- 1 tablespoon sugar
- 1 tablespoon sesame oil
- 1 teaspoon rice vinegar
- 2 green onions, chopped (for garnish)
- Sesame seeds (for garnish)
Instructions
- Preheat your oven to 400°F (200°C).
- In a small bowl, whisk together the miso paste, mirin, soy sauce, sugar, sesame oil, and rice vinegar until smooth.
- Place the eggplant halves on a baking sheet, cut side up.
- Spread the miso mixture evenly over the cut sides of the eggplant.
- Roast in the preheated oven for 25-30 minutes, or until the eggplant is tender and the glaze is caramelized.
- Remove from the oven and let cool slightly.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
- For a spicier version, add a teaspoon of sriracha to the miso glaze.
- You can also grill the eggplants instead of roasting them for a smoky flavor.
