Ingredients

  • 2 medium eggplants, sliced in half lengthwise
  • 1/4 cup white miso paste
  • 2 tablespoons mirin
  • 2 tablespoons soy sauce
  • 1 tablespoon sugar
  • 1 tablespoon sesame oil
  • 1 teaspoon rice vinegar
  • 2 green onions, chopped (for garnish)
  • Sesame seeds (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together the miso paste, mirin, soy sauce, sugar, sesame oil, and rice vinegar until smooth.
  3. Place the eggplant halves on a baking sheet, cut side up.
  4. Spread the miso mixture evenly over the cut sides of the eggplant.
  5. Roast in the preheated oven for 25-30 minutes, or until the eggplant is tender and the glaze is caramelized.
  6. Remove from the oven and let cool slightly.
  7. Garnish with chopped green onions and sesame seeds before serving.

Notes

  • For a spicier version, add a teaspoon of sriracha to the miso glaze.
  • You can also grill the eggplants instead of roasting them for a smoky flavor.
