These delicious Monster Cookie Energy Balls are packed with protein and made with oats, peanut butter, and chocolate chips. Perfect for a quick snack or post-workout treat!


Ingredients

  • 1 cup Rolled oats
  • 1/2 cup Peanut butter
  • 1/4 cup Honey or maple syrup
  • 1/2 cup Chocolate protein powder
  • 1/4 cup Mini chocolate chips
  • 1/4 cup M&Ms (optional)
  • 2 tablespoons Ground flaxseed (optional)
  • 1 teaspoon Vanilla extract

Instructions

  1. In a large mixing bowl, combine rolled oats, peanut butter, honey (or maple syrup), chocolate protein powder, and vanilla extract. Mix until well combined.
  2. Stir in mini chocolate chips and M&Ms (if using) until evenly distributed.
  3. If the mixture is too dry, add a little more honey or a splash of water; if too wet, add more oats or protein powder.
  4. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  5. Place the energy balls on a baking sheet lined with parchment paper.
  6. Refrigerate for at least 30 minutes to firm up.
  7. Store in an airtight container in the refrigerator for up to a week.
