Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup olive oil
  • Juice of 2 lemons
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Lemon slices for garnish
  • Fresh herbs for garnish

Instructions

  1. In a bowl, whisk together the olive oil, lemon juice, garlic, rosemary, thyme, salt, and pepper.
  2. Place the chicken breasts in a resealable bag or shallow dish and pour the marinade over the chicken. Seal the bag or cover the dish, then refrigerate for at least 30 minutes or up to 4 hours.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  6. Remove from the grill and let rest for 5 minutes before slicing.
