These adorable and delicious mini cakes are the perfect treat to celebrate Mother’s Day. They are easy to make, beautifully decorated, and sure to impress any mom!


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Buttercream frosting (for decoration)
  • Edible flowers or sprinkles (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the milk and vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Pour the batter into mini cake pans, filling each about 2/3 full.
  8. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the mini cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  10. Once cooled, decorate the mini cakes with buttercream frosting and top with edible flowers or sprinkles.

Notes

  • These mini cakes can be made ahead of time and stored in an airtight container.
