Spicy Nando’s Portuguese Chicken and Rice Ready in 40 Minutes

Description

A flavorful one-pot dish featuring tender Portuguese-style chicken and seasoned rice.


Ingredients

  • 4 chicken thighs, skin-on
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 tbsp olive oil
  • 1 tbsp Nando’s PERi-PERi sauce
  • 1 tsp paprika
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Season chicken thighs with salt, pepper, paprika, and oregano.
  3. Sear chicken thighs skin-side down until golden, then flip and cook for 2 minutes. Remove and set aside.
  4. In the same pot, sauté onion, garlic, and bell pepper until soft.
  5. Add rice and stir to coat with oil.
  6. Pour in chicken broth and stir in Nando’s PERi-PERi sauce.
  7. Return chicken thighs to the pot, skin-side up.
  8. Cover and simmer for 20 minutes or until rice is cooked.
  9. Remove from heat and let sit for 5 minutes.
  10. Garnish with fresh parsley before serving.

Notes

  • Adjust PERi-PERi sauce amount for more or less heat.
  • Use bone-in chicken thighs for extra flavor.
  • Stir rice gently to avoid breaking the grains.
