Description
A flavorful one-pot dish featuring tender Portuguese-style chicken and seasoned rice.

- 4 chicken thighs, skin-on
- 1 cup long-grain rice
- 2 cups chicken broth
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 tbsp olive oil
- 1 tbsp Nando’s PERi-PERi sauce
- 1 tsp paprika
- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Season chicken thighs with salt, pepper, paprika, and oregano.
- Sear chicken thighs skin-side down until golden, then flip and cook for 2 minutes. Remove and set aside.
- In the same pot, sauté onion, garlic, and bell pepper until soft.
- Add rice and stir to coat with oil.
- Pour in chicken broth and stir in Nando’s PERi-PERi sauce.
- Return chicken thighs to the pot, skin-side up.
- Cover and simmer for 20 minutes or until rice is cooked.
- Remove from heat and let sit for 5 minutes.
- Garnish with fresh parsley before serving.
Notes
- Adjust PERi-PERi sauce amount for more or less heat.
- Use bone-in chicken thighs for extra flavor.
- Stir rice gently to avoid breaking the grains.
