Ingredients

- 1 cup black-eyed peas
- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 bay leaf
- 1 tablespoon olive oil
Instructions
- Rinse the black-eyed peas under cold water.
- In a pot, heat olive oil over medium heat.
- Add chopped onion and garlic, sauté until soft.
- Add black-eyed peas, water, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat to low.
- Simmer for about 45 minutes until peas are tender.
- Remove bay leaf before serving.
Notes
- Soaking peas overnight can reduce cooking time.
- Serve with cornbread for a complete meal.
