Description

Ingredients

  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 300g cream cheese
  • 100g powdered sugar
  • 1 tsp vanilla extract
  • 200ml double cream
  • 200g mixed berries (strawberries, raspberries, blueberries)

Instructions

  1. Crush the digestive biscuits into fine crumbs and mix with melted butter.
  2. Press the mixture into the base of a springform tin and chill for 30 minutes.
  3. Beat the cream cheese, powdered sugar, and vanilla extract until smooth.
  4. Whip the double cream until stiff peaks form, then fold into the cream cheese mixture.
  5. Spread the filling over the biscuit base and chill for at least 4 hours.
  6. Top with mixed berries before serving.
