Description

These delightful no-bake lemon lavender cheesecake bites are perfect for a refreshing dessert. Creamy, tangy, and infused with delicate lavender, they are easy to make and require no baking!


Ingredients

  • 8 oz Cream cheese
  • 1/2 cup Greek yogurt
  • 1/3 cup Powdered sugar
  • 2 tbsp Fresh lemon juice
  • 1 tsp Lemon zest
  • 1 tsp Dried culinary lavender
  • 1 cup Graham cracker crumbs
  • 4 tbsp Butter
  • 1 tsp Vanilla extract
  • 1/4 tsp Salt

Instructions

  1. In a large mixing bowl, beat the softened cream cheese until smooth.
  2. Add the Greek yogurt, powdered sugar, lemon juice, lemon zest, dried lavender, and vanilla extract. Beat until well combined and creamy.
  3. In another bowl, mix the graham cracker crumbs, melted butter, and salt until the crumbs are evenly coated.
  4. Line a mini muffin tin with paper liners. Press about a tablespoon of the graham cracker mixture into the bottom of each liner to form a crust.
  5. Spoon the cheesecake mixture on top of the crusts, filling each liner almost to the top.
  6. Refrigerate for at least 2 hours, or until set.
  7. Once set, remove from the muffin tin and serve chilled. Garnish with additional lemon zest or lavender if desired.
