These delightful no-bake lemon lavender cheesecake bites are perfect for a refreshing dessert. Creamy, tangy, and infused with delicate lavender, they are easy to make and require no baking!

- 8 oz Cream cheese
- 1/2 cup Greek yogurt
- 1/3 cup Powdered sugar
- 2 tbsp Fresh lemon juice
- 1 tsp Lemon zest
- 1 tsp Dried culinary lavender
- 1 cup Graham cracker crumbs
- 4 tbsp Butter
- 1 tsp Vanilla extract
- 1/4 tsp Salt
Instructions
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Add the Greek yogurt, powdered sugar, lemon juice, lemon zest, dried lavender, and vanilla extract. Beat until well combined and creamy.
- In another bowl, mix the graham cracker crumbs, melted butter, and salt until the crumbs are evenly coated.
- Line a mini muffin tin with paper liners. Press about a tablespoon of the graham cracker mixture into the bottom of each liner to form a crust.
- Spoon the cheesecake mixture on top of the crusts, filling each liner almost to the top.
- Refrigerate for at least 2 hours, or until set.
- Once set, remove from the muffin tin and serve chilled. Garnish with additional lemon zest or lavender if desired.
