This No-Bake Mango Cheesecake is a creamy and delicious dessert that is perfect for summer gatherings. With a buttery biscuit base and a smooth mango filling, it’s easy to make and requires no baking!

- 200g Digestive biscuits
- 100g Unsalted butter
- 400g Cream cheese
- 100g Powdered sugar
- 200g Mango puree
- 10g Gelatin powder
- 1 Fresh mango
Instructions
- In a bowl, mix the crushed digestive biscuits with melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the base. Chill in the refrigerator for 30 minutes.
- In a mixing bowl, combine the softened cream cheese and powdered sugar. Mix until smooth.
- Add the mango puree and dissolved gelatin to the cream cheese mixture, and mix until well combined.
- Pour the mango filling over the chilled biscuit base and smooth the top.
- Refrigerate for at least 4 hours or until set.
- Garnish with fresh mango slices before serving.
Notes
- Make sure the cream cheese is at room temperature for easier mixing.
- For a stronger mango flavor, use fresh mango puree.
- If you prefer a sweeter cheesecake, adjust the powdered sugar to taste.
