This No-Bake Mango Cheesecake is a creamy and delicious dessert that is perfect for summer gatherings. With a buttery biscuit base and a smooth mango filling, it’s easy to make and requires no baking!


Ingredients

  • 200g Digestive biscuits
  • 100g Unsalted butter
  • 400g Cream cheese
  • 100g Powdered sugar
  • 200g Mango puree
  • 10g Gelatin powder
  • 1 Fresh mango

Instructions

  1. In a bowl, mix the crushed digestive biscuits with melted butter until combined.
  2. Press the mixture into the bottom of a springform pan to form the base. Chill in the refrigerator for 30 minutes.
  3. In a mixing bowl, combine the softened cream cheese and powdered sugar. Mix until smooth.
  4. Add the mango puree and dissolved gelatin to the cream cheese mixture, and mix until well combined.
  5. Pour the mango filling over the chilled biscuit base and smooth the top.
  6. Refrigerate for at least 4 hours or until set.
  7. Garnish with fresh mango slices before serving.

Notes

  • Make sure the cream cheese is at room temperature for easier mixing.
  • For a stronger mango flavor, use fresh mango puree.
  • If you prefer a sweeter cheesecake, adjust the powdered sugar to taste.
