Ingredients

- 2 cups of diced potatoes
- 1 cup of chopped bell peppers
- 1 cup of chopped onions
- 1 cup of shredded cheese
- 1 cup of plant-based milk
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of salt
- 1/2 teaspoon of black pepper
- 1/2 teaspoon of paprika
Instructions
- Preheat the oven to 375°F.
- In a skillet, heat olive oil and sauté onions and bell peppers until soft.
- Add diced potatoes, garlic powder, salt, pepper, and paprika. Cook until potatoes are tender.
- In a bowl, mix plant-based milk and shredded cheese.
- Combine vegetable mixture with the milk and cheese mixture.
- Pour into a greased baking dish.
- Bake for 30-35 minutes or until golden brown.
Notes
- For extra flavor, add herbs like oregano or basil.
- You can use any cheese of your choice.
- This dish can be made ahead and reheated.
