Description

A hearty old fashioned beef stew with tender beef chunks simmered to perfection.


Ingredients

  • 2 lbs beef chuck, cut into chunks
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 4 cups beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 bay leaf
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat.
  2. Brown the beef chunks on all sides, then remove from pot.
  3. Sauté onions and garlic until softened.
  4. Add carrots and potatoes, cook for 5 minutes.
  5. Return beef to pot, stir in broth, tomato paste, Worcestershire sauce, bay leaf, and thyme.
  6. Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beef is tender.
  7. Season with salt and pepper before serving.

Notes

  • Cut beef into even chunks for uniform cooking.
  • For thicker stew, mix 1 tbsp flour with water and stir in.
