Description
A hearty old fashioned beef stew with tender beef chunks simmered to perfection.
Ingredients

- 2 lbs beef chuck, cut into chunks
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 4 cups beef broth
- 1 tbsp tomato paste
- 1 tsp Worcestershire sauce
- 1 bay leaf
- 1 tsp thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef chunks on all sides, then remove from pot.
- Sauté onions and garlic until softened.
- Add carrots and potatoes, cook for 5 minutes.
- Return beef to pot, stir in broth, tomato paste, Worcestershire sauce, bay leaf, and thyme.
- Bring to a boil, then reduce heat and simmer for 1.5-2 hours until beef is tender.
- Season with salt and pepper before serving.
Notes
- Cut beef into even chunks for uniform cooking.
- For thicker stew, mix 1 tbsp flour with water and stir in.
- Store leftovers in fridge for up to 3 days.
