- 1 teaspoon baking soda
- 2 teaspoons ground ginger

- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup honey
- 1/4 cup molasses
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts (optional)
- 1/2 cup dried fruit (optional)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a medium bowl, whisk together the flour, baking soda, spices, and salt. Set aside.
- In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
- Add the honey, molasses, eggs, and vanilla extract to the butter mixture, mixing until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the chopped nuts and dried fruit, if using.
- Pour the batter into the prepared baking pan and smooth the top with a spatula.
- Bake in the preheated oven for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
