- 4 boneless, skinless chicken breasts
- 1 can (400 ml) coconut milk
- 2 limes (juiced and zested)
- 2 cloves garlic (minced)
- 1 tbsp olive oil
- 1 tsp ground cumin
- 1 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh cilantro for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken breasts and cook for 5-6 minutes per side until browned.
- Remove chicken and set aside.
- In the same skillet, add garlic, cumin, and paprika. Cook for 30 seconds.
- Pour in coconut milk and lime juice. Stir well.
- Return chicken to the skillet. Simmer for 10-12 minutes until chicken is cooked through.
- Garnish with lime zest and cilantro before serving.

- Use full-fat coconut milk for the best texture.
- Adjust salt and pepper to taste.
