Description
A quick and healthy one-pan meal featuring shrimp and zucchini noodles tossed in a lemon garlic sauce.
Ingredients

- 1 lb shrimp, peeled and deveined
- 2 medium zucchinis, spiralized
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add shrimp and cook for 2-3 minutes per side until pink. Remove and set aside.
- In the same skillet, sauté garlic for 30 seconds until fragrant.
- Add zucchini noodles and cook for 2 minutes, stirring occasionally.
- Return shrimp to the skillet.
- Add lemon juice, zest, salt, and pepper. Toss to combine.
- Garnish with fresh parsley and serve immediately.

- Use pre-spiralized zucchini noodles to save time.
- Adjust lemon and garlic quantities to taste.
- Serve with crusty bread for soaking up the sauce.
