This One-Pan Spicy Chicken Fried Rice is a quick and easy meal packed with flavor. Perfect for a busy weeknight dinner, it combines tender chicken, colorful vegetables, and a spicy kick all in one pan.


Ingredients

  • 2 cups cooked rice (preferably day-old)
  • 1 pound chicken breast, diced
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha or chili sauce (adjust to taste)
  • 1 tablespoon sesame oil
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 3 cloves garlic, minced
  • 2 green onions, sliced
  • 1 teaspoon ginger, minced
  • Salt and pepper to taste
  • 1 tablespoon vegetable oil for cooking

Instructions

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the diced chicken breast and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. In the same pan, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
  4. Add the mixed vegetables to the pan and cook for another 3-4 minutes until they are tender.
  5. Stir in the cooked rice, soy sauce, sriracha, and sesame oil. Mix well to combine all the ingredients.
  6. Return the cooked chicken to the pan and mix everything together. Cook for an additional 2-3 minutes until heated through.
