This One-Pan Spicy Chicken Fried Rice is a quick and easy meal packed with flavor. Perfect for a busy weeknight dinner, it combines tender chicken, colorful vegetables, and a spicy kick all in one pan.

- 2 cups cooked rice (preferably day-old)
- 1 pound chicken breast, diced
- 2 tablespoons soy sauce
- 1 tablespoon sriracha or chili sauce (adjust to taste)
- 1 tablespoon sesame oil
- 1 cup mixed vegetables (carrots, peas, bell peppers)
- 3 cloves garlic, minced
- 2 green onions, sliced
- 1 teaspoon ginger, minced
- Salt and pepper to taste
- 1 tablespoon vegetable oil for cooking
Instructions
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the diced chicken breast and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
- In the same pan, add the minced garlic and ginger. Sauté for about 30 seconds until fragrant.
- Add the mixed vegetables to the pan and cook for another 3-4 minutes until they are tender.
- Stir in the cooked rice, soy sauce, sriracha, and sesame oil. Mix well to combine all the ingredients.
- Return the cooked chicken to the pan and mix everything together. Cook for an additional 2-3 minutes until heated through.
