- 12 oz penne pasta
- 1 lb chicken breast, diced (or shrimp/sausage)
- 1 tablespoon olive oil
- 1 onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 tablespoons Cajun seasoning
- 1 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup heavy cream
- 1 cup shredded cheese (cheddar or mozzarella)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced chicken (or shrimp/sausage) and cook until browned, about 5-7 minutes.
- Add the diced onion and bell pepper to the pot, cooking until softened, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the penne pasta, chicken broth, diced tomatoes (with juice), Cajun seasoning, smoked paprika, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 15 minutes, or until the pasta is al dente and the liquid is mostly absorbed.
- Stir in the heavy cream and shredded cheese. Cook for an additional 2-3 minutes until the cheese is melted and the sauce is creamy.
- Serve hot, garnished with chopped parsley.
Notes
- Feel free to adjust the level of Cajun seasoning to your taste.
- For a vegetarian option, substitute the chicken with a mix of your favorite vegetables and use vegetable broth.
