  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup heavy cream
  • 1 cup shredded cheese (cheddar or mozzarella)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced chicken (or shrimp/sausage) and cook until browned, about 5-7 minutes.
  2. Add the diced onion and bell pepper to the pot, cooking until softened, about 3-4 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the penne pasta, chicken broth, diced tomatoes (with juice), Cajun seasoning, smoked paprika, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce heat to a simmer. Cover and cook for about 15 minutes, or until the pasta is al dente and the liquid is mostly absorbed.
  6. Stir in the heavy cream and shredded cheese. Cook for an additional 2-3 minutes until the cheese is melted and the sauce is creamy.
  7. Serve hot, garnished with chopped parsley.
