- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1/4 cup dry white wine
- 1 cup chicken broth
- 2 tablespoons lemon juice
- 2 tablespoons capers, drained
- 2 tablespoons unsalted butter
- 1 tablespoon chopped fresh parsley
Instructions
- Pound chicken breasts to an even thickness and season with salt and pepper.
- Dredge chicken in flour, shaking off excess.
- Heat olive oil in a skillet over medium-high heat. Cook chicken until golden brown, about 3-4 minutes per side. Remove and set aside.
- Deglaze the pan with white wine, scraping up browned bits.
- Add chicken broth, lemon juice, and capers. Bring to a simmer.
- Return chicken to the pan and cook until sauce thickens slightly, about 2-3 minutes.
- Stir in butter and parsley before serving.

- Serve over pasta or mashed potatoes.
