- 2 boneless, skinless chicken breasts
- 1 cup white rice
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic, sauté until soft.
- Add chicken breasts, cook until browned on both sides.
- Stir in rice, chicken broth, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Remove chicken, shred it, and return to the pot.
- Stir in heavy cream and cook for 5 more minutes.
Notes
- Use long-grain rice for best results.
- Adjust salt and pepper to taste.
- Add vegetables like peas or carrots if desired.
