Ingredients

  • 8 oz pasta (any type)
  • 2 cups mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup vegetable broth
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil and butter in a large pot over medium heat.
  2. Add mushrooms and sauté until golden brown, about 5 minutes.
  3. Add garlic and cook for 1 minute until fragrant.
  4. Pour in vegetable broth and heavy cream, then stir in thyme and rosemary.
  5. Bring to a simmer and add pasta. Cook until pasta is tender, stirring occasionally.
  6. Season with salt and pepper to taste.
  7. Stir in Parmesan cheese until melted.
  8. Garnish with fresh parsley before serving.
