Delicious pan seared scallops with a tangy lemon caper sauce.
Ingredients

- 1 pound scallops
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 tablespoons capers
- 1 lemon (juiced and zested)
- Salt to taste
- Pepper to taste
Instructions
- Pat scallops dry with paper towels.
- Season scallops with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add scallops to the skillet and sear for 2-3 minutes on each side until golden brown.
- Remove scallops from skillet and set aside.
- In the same skillet, add butter and capers; cook for 1 minute.
- Add lemon juice and zest; stir well.
- Return scallops to the skillet; coat with the sauce.
- Serve immediately.
Notes
- Use fresh scallops for best flavor.
- Do not overcrowd the skillet while searing.
- Adjust lemon juice to taste.
