- 1 pound sea scallops
- 2 tablespoons olive oil
- 2 tablespoons butter
- 2 tablespoons capers, rinsed
- 1 lemon, juiced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Pat the scallops dry with a paper towel.
- Season with salt and pepper.
- Heat olive oil in a skillet over medium-high heat.
- Add scallops and sear for 2-3 minutes on each side until golden brown.
- Remove scallops and set aside.
- In the same skillet, add butter and capers.
- Pour in lemon juice and cook for 1 minute.
- Return scallops to the skillet and coat with sauce.
- Garnish with fresh parsley and serve immediately.

- Do not overcrowd the pan while searing.
