A delicious and decadent dessert featuring layers of sponge cake filled with creamy custard and topped with a rich chocolate ganache.

- 1 cup all-purpose flour
- 1/2 cup sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups milk
- 1/2 cup sugar (for custard)
- 1/4 cup cornstarch
- 4 large egg yolks
- 2 teaspoons vanilla extract (for custard)
- 1 cup heavy cream
- 8 ounces dark chocolate, chopped
- 1/2 cup heavy cream (for ganache)
Instructions
- Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.
- In a mixing bowl, cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, sift together the flour, baking powder, and salt. Gradually add to the butter mixture, mixing until just combined.
- Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean. Let cool completely.
- While the cake is baking, prepare the custard. In a saucepan, combine the milk, sugar, cornstarch, and egg yolks. Cook over medium heat, stirring constantly until thickened. Remove from heat and stir in the vanilla extract. Let cool.
- Once the cake has cooled, slice it horizontally into two layers. Spread the custard evenly over the bottom layer, then place the top layer back on.
- For the ganache, heat 1/2 cup of heavy cream in a saucepan until just simmering. Pour it over the chopped chocolate and let sit for 5 minutes. Stir until smooth.
- Pour the ganache over the top of the cake, allowing it to drip down the sides. Refrigerate until set.
- Slice and serve the Papal Cream Cake chilled.
Notes
- You can add fruit between the layers for extra flavor.
- Make sure to let the ganache cool slightly before pouring it over the cake to avoid melting the custard.
