Ingredients

  • 8 oz pasta (penne or fettuccine)
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 3 cloves garlic, minced
  • 2 cups fresh spinach
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until tender.
  3. Add garlic and sauté for 30 seconds.
  4. Stir in spinach and cook until wilted.
  5. Reduce heat to low. Add heavy cream and Parmesan cheese, stirring until melted.
