Ingredients

- 8 oz pasta (penne or fettuccine)
- 2 tbsp olive oil
- 8 oz mushrooms, sliced
- 3 cloves garlic, minced
- 2 cups fresh spinach
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- Salt and pepper to taste
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cook pasta according to package instructions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add mushrooms and cook until tender.
- Add garlic and sauté for 30 seconds.
- Stir in spinach and cook until wilted.
- Reduce heat to low. Add heavy cream and Parmesan cheese, stirring until melted.
- Mix in cooked pasta. Season with salt, pepper, and red pepper flakes.
- Serve warm with extra Parmesan if desired.
Notes
- Use gluten-free pasta if needed.
- Substitute half-and-half for heavy cream for a lighter version.
- Add grilled chicken for extra protein.
