Description
A healthy and delicious pasta salad recipe with a light dressing.
Ingredients

- 2 cups whole wheat pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and cool.
- In a large bowl, combine the pasta, cherry tomatoes, cucumber, bell pepper, and red onion.
- In a small bowl, whisk together olive oil, lemon juice, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat.
- Refrigerate for 30 minutes before serving.

- Use any vegetables you prefer.
- Add grilled chicken for extra protein.
- Store leftovers in the refrigerator for up to 3 days.
