Description
A healthy Italian pasta salad packed with fresh vegetables and a light dressing.
Ingredients

- 8 ounces whole grain pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, diced
- 1/2 cup bell pepper, diced
- 1/4 cup black olives, sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and rinse with cold water.
- In a large bowl, combine pasta, cherry tomatoes, cucumber, red onion, bell pepper, black olives, and basil.
- In a small bowl, whisk together olive oil, red wine vinegar, garlic powder, salt, and pepper.
- Pour the dressing over the pasta salad and toss to coat.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add any of your favorite vegetables.
- For extra protein, add grilled chicken or chickpeas.
- This salad can be stored in the fridge for up to 3 days.
