These PB2 Protein Balls are delicious, easy to make, and require no baking! Perfect for a quick snack or a post-workout boost.
Ingredients

- 1 cup PB2 powdered peanut butter
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1/4 cup chocolate chips or nuts (optional)
- 1/2 teaspoon vanilla extract
- 1/4 cup water (as needed)
Instructions
- In a large mixing bowl, combine PB2 powdered peanut butter, rolled oats, honey or maple syrup, and vanilla extract.
- Mix well until all ingredients are combined. If the mixture is too dry, add water a tablespoon at a time until it reaches a sticky consistency.
- Fold in chocolate chips or nuts if using.
- Using your hands, roll the mixture into small balls, about 1 inch in diameter.
- Place the energy bites on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to set.
- Store any leftovers in an airtight container in the fridge for up to one week.
Notes
- Feel free to customize these energy bites by adding different mix-ins such as dried fruits, seeds, or other nut butter.
- For a protein boost, consider adding protein powder to the mixture.
