Ingredients

  • 4 cups day-old bread, cubed
  • 1 cucumber, sliced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil, torn
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Toss bread cubes with 1 tbsp olive oil and bake for 10-12 minutes until crisp.
  3. In a large bowl, combine peaches, cucumber, red onion, and basil.
  4. Add toasted bread cubes.
  5. Drizzle with remaining olive oil and balsamic vinegar.
  6. Toss gently and season with salt and pepper.
