Ingredients

- 3 ripe peaches, sliced
- 4 cups day-old bread, cubed
- 1 cucumber, sliced
- 1/2 red onion, thinly sliced
- 1/4 cup fresh basil, torn
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Toss bread cubes with 1 tbsp olive oil and bake for 10-12 minutes until crisp.
- In a large bowl, combine peaches, cucumber, red onion, and basil.
- Add toasted bread cubes.
- Drizzle with remaining olive oil and balsamic vinegar.
- Toss gently and season with salt and pepper.
- Serve immediately.

- Use slightly stale bread for better texture.
- Add feta cheese for extra flavor.
