- 1 cup pearl barley
- 1 tablespoon olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 6 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes, undrained
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 2 cups kale or spinach, chopped
- Fresh parsley for garnish
Instructions
- Rinse the pearl barley under cold water and set aside.
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are tender, about 5-7 minutes.
- Add the garlic and cook for another minute until fragrant.
- Stir in the pearl barley, vegetable broth, diced tomatoes, thyme, oregano, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat to low and simmer for about 30-40 minutes, or until the barley is tender.
- In the last 5 minutes of cooking, stir in the kale or spinach until wilted.
- Serve hot, garnished with fresh parsley.
Notes
- Feel free to add any vegetables you like or have on hand.
- For a heartier soup, add cooked chicken or sausage.
- Store leftovers in an airtight container in the fridge for up to 3 days.
