Ingredients

  • 1 cup pearl barley
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, minced
  • 6 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 2 cups kale or spinach, chopped
  • Fresh parsley for garnish

Instructions

  1. Rinse the pearl barley under cold water and set aside.
  2. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté until the vegetables are tender, about 5-7 minutes.
  3. Add the garlic and cook for another minute until fragrant.
  4. Stir in the pearl barley, vegetable broth, diced tomatoes, thyme, oregano, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat to low and simmer for about 30-40 minutes, or until the barley is tender.
  6. In the last 5 minutes of cooking, stir in the kale or spinach until wilted.
  7. Serve hot, garnished with fresh parsley.
