Ingredients

  • 1 cup pearl barley
  • 3 cups vegetable broth or water
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 bell pepper, chopped
  • 1 zucchini, diced
  • 1 cup spinach, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse the pearl barley under cold water and drain.
  2. In a large saucepan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until translucent.
  3. Add diced carrot and bell pepper, cooking for about 5 minutes until softened.
  4. Stir in the rinsed pearl barley, followed by the vegetable broth or water. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for about 30-35 minutes, or until the barley is tender and has absorbed the liquid.
  6. In the last 5 minutes of cooking, add the zucchini, spinach, thyme, salt, and pepper. Stir to combine.
  7. Remove from heat and let it sit covered for a few minutes before serving.
