Ingredients

- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and diced
- 3–4 tablespoons ice water
- 3 large eggs
- 1 cup light corn syrup
- 1 cup granulated sugar
- 2 tablespoons unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 1/2 cups pecan halves
Instructions
- Preheat oven to 350°F (175°C).
- Mix flour and salt in a bowl. Cut in chilled butter until mixture resembles coarse crumbs.
- Gradually add ice water, stirring until dough forms. Shape into a disk, wrap in plastic, and chill for 30 minutes.
- Roll out dough on a floured surface and fit into a 9-inch pie dish. Trim edges.
- Whisk eggs, corn syrup, sugar, melted butter, and vanilla in a bowl. Stir in pecans.
- Pour filling into the crust. Bake for 50-60 minutes until set. Cool before serving.
Notes
- Use a food processor for quicker crust preparation.
- Chill the dough to prevent shrinkage.
- Cover pie edges with foil if browning too fast.
