Description

A hearty and flavorful beef stew cooked slowly in a crockpot for tender meat and rich flavors.


Ingredients

  • 2 lbs beef stew meat, cubed
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 2 tbsp flour
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a pan and brown the beef cubes on all sides.
  2. Transfer the beef to the crockpot.
  3. Add carrots, potatoes, onion, and garlic to the crockpot.
  4. In a bowl, whisk beef broth, tomato paste, thyme, rosemary, flour, salt, and pepper.
  5. Pour the mixture over the ingredients in the crockpot.
  6. Add the bay leaf.
  7. Cover and cook on low for 8 hours or high for 4 hours.
  8. Remove the bay leaf before serving.

Notes

  • For thicker stew, mix 1 tbsp cornstarch with 2 tbsp water and stir into the stew during the last 30 minutes of cooking.
  • You can add peas or mushrooms for extra flavor.
  • Store leftovers in an airtight container for up to 3 days.
