A festive dinner to celebrate St. Patrick’s Day with traditional Irish dishes.
Ingredients

- 4 cups of diced potatoes
- 2 cups of chopped cabbage
- 1 cup of chopped carrots
- 1 pound of corned beef
- 4 cups of beef broth
- 2 tablespoons of mustard
- Salt to taste
- Pepper to taste
Instructions
- Prepare the corned beef by rinsing it under cold water.
- In a large pot, combine beef broth and corned beef. Bring to a boil.
- Add potatoes, carrots, and cabbage to the pot.
- Season with mustard, salt, and pepper.
- Simmer until the vegetables are tender, about 30 minutes.
- Serve hot with a garnish of fresh parsley.

- This dish pairs well with Irish soda bread.
- For a vegetarian option, replace corned beef with mushrooms.
- Leftovers can be stored in the refrigerator for up to three days.
