Ingredients

- 2 boneless, skinless chicken breasts, cubed
- 8 oz pasta (penne or fusilli)
- 1/2 cup basil pesto
- 1/4 cup grated parmesan cheese
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup pasta water (reserved)
Instructions
- Cook pasta according to package instructions. Reserve 1/4 cup pasta water before draining.
- Heat olive oil in a skillet over medium heat. Add chicken, salt, and pepper. Cook until golden (5-6 minutes).
- Add minced garlic and cook for 30 seconds until fragrant.
- Stir in cooked pasta, pesto, and reserved pasta water. Toss to coat.
- Sprinkle with parmesan cheese and serve warm.

- Use fresh pesto for best flavor
- Add cherry tomatoes or spinach for extra veggies
- Substitute chicken with shrimp for variation
