  • 1 cup diced potatoes

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the diced onions and carrots, and sauté until softened, about 5 minutes.
  2. Add the diced potatoes and continue to sauté for another 5 minutes.
  3. Pour in the chicken or vegetable broth and bring to a boil. Reduce heat and let simmer for about 15 minutes, or until the potatoes are tender.
  4. Stir in the diced pickles and heavy cream. Cook for an additional 5 minutes, allowing the flavors to meld.
  5. Add fresh dill, and season with salt and pepper to taste.
  6. Serve hot, garnished with extra dill if desired.
