- 4 cups chicken or vegetable broth
- 2 cups pickles, diced
- 1 cup diced potatoes
- 1 cup diced onion
- 1 cup diced carrots
- 1 cup heavy cream
- 1 tablespoon fresh dill, chopped
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the diced onions and carrots, and sauté until softened, about 5 minutes.
- Add the diced potatoes and continue to sauté for another 5 minutes.
- Pour in the chicken or vegetable broth and bring to a boil. Reduce heat and let simmer for about 15 minutes, or until the potatoes are tender.
- Stir in the diced pickles and heavy cream. Cook for an additional 5 minutes, allowing the flavors to meld.
- Add fresh dill, and season with salt and pepper to taste.
- Serve hot, garnished with extra dill if desired.
